As part of the special exhibition ‘The New Dramaturgy of Eating: Design Beyond the Plate’, we invite you to an exclusive and inspiring afternoon with gourmet chef Christian Krüger from the ‘Faktorei21’ restaurant in Duisburg. Together with him, you’ll look beyond the edge of your plate, discover how the ancient art of fermentation opens up new taste experiences, how creative and sustainable culinary practices effectively tackle food waste, and how the design and arrangement of tableware influence our perception. The gourmet chef will also demystify the secrets of ‘plate psychology’ and demonstrate how colours, shapes and textures influence our senses and our perception of flavour.
